Ingredients

  • 1/8 cup butter
  • 4 tsp chili powder
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • 4 oz. fresh shiitake mushrooms, stemmed, sliced
  • 4 oz. button mushrooms, sliced
  • 1 1/2 cups shredded cooked chicken
  • 2/3 cup finely chopped onion
  • 1/3 cup chopped fresh cilantro
  • 2 1/2 cups grated Monterey Jack cheese
  • tortillas
  • Melt butter in skillet. Add chili powder, garlic and oregano. Saute until fragrant. Add mushrooms and saute until tender.
  • Remove from heat. Mix in chicken, onion and cilantro. Cool, add cheese. Season with salt and pepper.
  • Put mixture on tortillas. Grill tortillas until golden brown. Cut into wedges.
