Process white wine vinegar and next 4 ingredients in a blender or food processor until smooth, stopping to scrape down sides. With blender or processor running, gradually add olive oil and canola oil in a slow, steady stream; process until smooth.
Note: Store remaining dressing in an airtight container in refrigerator up to 1 week.
