Pureed Squash

Baking the squash before putting in a food processor will will result in a smoother, creamier puree, especially if you add a splash of butter or cream!

Ingredients

1 small, whole winter squash
butter or cream
seasonings

Preparation

Pureed squash: Pierce a small, whole squash with a fork, rub with oil and bake at 350°F until tender, about 1 hour. Split open, scoop out flesh into a food processor and puree with butter or cream and seasonings.
