Ingredients
- 1 cup(s) Flour
- 1/2 cup(s) Sugar
- 2 teaspoon(s) Baking powder
- 1.5 teaspoon(s) Cinnamon
- 1/2 teaspoon(s) Salt
- 1/4 teaspoon(s) Pumpkin pie spice
- 4 tablespoon(s) Cold butter, cut into pieces
- 1 cup(s) Pumpkin puree (heaping)
- 1/2 cup(s) Evap milk
- 1 Egg
- 1.5 teaspoon(s) Vanilla extract
- Topping
- 2 tablespoon(s) Sugar
- 1 teaspoon(s) Cinnamon
- 1/4 teaspoon(s) Nutmeg
- For Frosting
- 1/4 cup(s) Butter, softened
- 4 ounce(s) Cream cheese
- 1/2 pound(s) Powdered sugar
- 1/2 teaspoon(s) Vanilla extract
Preparation
- 1. preheat oven to 400 - grease 12 muffin tins
- 2. sift flour, baking powder, cinnamon, pumpkin pie spice and salt - cut in butter
- 3. in separate bowl, mix pumpkin, evap milk, egg and vanilla - pour pumpkin mixture into flour mixture - fold gently to combine
- 4. pour into greased muffin pan - sprinkle with "topping" mixture
- 5. bake for 25 minutes - allow to cool in pan for 15 minutes - then remove and top with frosting
- 6. for frosting: mix all ingredients oh high until soft and whipped - spread onto cooled muffins - store in fridge (icing will soften)
