  • PUMPKIN CAKE
  • HEAT OVEN TO 375 DEGREES
  • 2 C FLOUR
  • 2 TSP BAKING SODA
  • 1/2 TSP SALT
  • 2 TBSP CINNAMON
  • 1 TSP BAKING POWDER
  • 3/4 C CHOPPED WALNUTS OR PECANS
  • ***************
  • 2 C SUGAR
  • 4 EGGS
  • 1 C WESSON (VEGETABLE) OIL
  • ***************
  • 2 CUPS CANNED PUMPKIN...1 SMALL (15 OZ) CAN
  • ***************
  • ICING:
  • 1 1/2 STICKS SOFT BUTTER OR MARGARINE
  • 1 8 OZ PKG CREAM CHEESE, SOFTENED
  • 3 C POWDERED SUGAR
  • 2 TSP VANILLA
  • 1 C CHOPPED NUTS
  • CREAM TOGETHER CREAM CHEESE, VANILLA & SUGAR. ADD NUTS.

Preparation

  1. MIX DRY INGREDIENTS IN A LARGE BOWL

  2. MIX SUGAR, EGGS AND OIL IN A SMALL BOWL

  3. ADD THIS TO LARGE BOWL OF INGREDIENTS

  4. THEN MIX IN 2 C PUMPKIN.
  5. ADD CHOPPED NUTS STIR

  6. GREASE & FLOUR A 13X9 PAN
  7. POUR MIXTURE INTO PAN & BAKE FOR 1 HOUR, TESTING AFTER 45 MIN
  8. COOL COMPLETELY & FROST WITH CREAM CHEESE ICING.
