Ingredients
- PUMPKIN CAKE
- HEAT OVEN TO 375 DEGREES
- 2 C FLOUR
- 2 TSP BAKING SODA
- 1/2 TSP SALT
- 2 TBSP CINNAMON
- 1 TSP BAKING POWDER
- ***************
- 2 C SUGAR
- 4 EGGS
- 1 C OIL
- ***************
- 2 CUPS CANNED PUMPKIN
- ***************
- ICING:
- 1 1/2 STICKS SOFT BUTTER OR MARGARINE
- 1 8 OZ PKG CREAM CHEESE, SOFTENED
- 2 TSP VANILLA
- 1 C CHOPPED NUTS
- Cream together butter, cream cheese & vanilla. Then add chopped nuts.
Preparation
- MIX DRY INGREDIENTS IN A LARGE BOWL
- MIX SUGAR, EGGS AND OIL IN A SMALL BOWL
- ADD THIS TO LARGE BOWL OF INGREDIENTS
- THEN MIX IN 2 C PUMPKIN.
- ADD CHOPPED NUTS STIR
- GREASE & FLOUR A 13X9 PAN
- POUR MIXTURE INTO PAN & BAKE FOR 1 HOUR, TESTING AFTER 45 MIN
- COOL COMPLETELY & FROST WITH CREAM CHEESE ICING.
