Ingredients
- 4 eggs well beaten
- 1 cup(s) oil
- 2 cup(s) sugar
- 2 cup(s) canned pumpkin
- 1 teaspoon(s) vanilla
- 2 1/4 cup(s) flour
- 2 teaspoon(s) cinnamon
- 1 teaspoon(s) baking soda
- 1 teaspoon(s) salt
- CREAM CHEESE FROSTING
- 4 ounce(s) cream cheese softened
- 1/2 cup(s) margarine softened
- 1 teaspoon(s) vanilla
- 2 cup(s) powdered sugar
Preparation
- 1. Preheat oven to 350 degrees. Grease and flour cookie sheet.
- 2. Mix eggs, oil, sugar, pumpkin and vanilla in a large bowl. Sift together flour, cinnamon, baking soda and salt in another bowl. Mix ingredients of both bowls all together.
- 3. Pour into cookie sheet and bake for 25 minutes. Let cake cool and frost with cream cheese frosting.
- CREAM CHEESE FROSTING:
- Mix all ingredients together in a bowl. Spread on cooked pumpkin cake once it's cooled.
