In a large bowl, mix together the sugar, flour, salt, baking soda, baking powder, pumpkin pie spice and cinnamon. In a medium bowl mix together the beaten eggs, melted butter, sour cream, vanilla and pumpkin puree. Mix the wet ingredients into the dry ingredients and stir to incorporate. Pour the dough into two loaf pans sprayed with nonstick spray.
Bake at 350° for 1 hour or until an inserted toothpick comes out clean. Cool slightly before serving. Store covered.
