- Kosher Salt
- Brown Sugar
- Have pork shoulder at room temperature
- Cover with rub and let sit for 15 minutes and put on rack in pan
- Preheat oven to 425 degrees
- Cook at 425 to 15 minutes then drop temperature to 285 and cook for several hours (6 or more is best)
