Arrange bread in a single layer on a baking sheet; broil 3 minutes or until toasted. Turn bread slices over; spread butter evenly over bread slices. Broil an additional 2 minutes or until toasted.
Combine arugula and shallot in a medium bowl. Drizzle arugula mixture with oil and vinegar; sprinkle with pepper. Toss well to coat. Divide arugula mixture evenly among 4 bread slices, buttered side up; top evenly with prosciutto. Divide pear slices and cheese evenly among sandwiches; top each sandwich with 1 bread slice, buttered side down.
Good flavor combinations, but I didn't care for the texture of the prosciutto straight out of the package . I didn't have arugula on hand, so I used romain; it was very good. Next time, I will use deli ham, I think then we'll have a winner!
This sandwich will knock your socks off. The combination of salty ham, the bite of blue cheese and the sweet smoothness of pears is a sensation for your tounge. My guests have unfailingly asked for the recipe EVERY time I've made them.
This was excellent, all of us liked it, including my teenage son, the combination of flavors was outstanding. I used balsamic vinegar for the arugula as I was out of red wine vinegar and it was great with the blue cheese, otherwise I made it exactly as written. Will definitely make it again, it was very easy for a quick weeknight dinner.
I loved this recipe but made it a lighter version since I am on weight watchers. I used 45 calorie multi grain bread, no butter and put it in the toaster. I used lite blue cheese and everything came out tasting great.
