1. Cut ends from prickly pears. Cut a lengthwise slit through peel on each fruit. Pull back peel, scoop out fruit, and discard peel.
2. Put prickly pear pulp, lemon juice, sugar, and 1 cup water in a blender or food processor. Whirl until smooth.
3. Pour into ice-filled glasses.
