Baby Potatoes with Warm Bacon Vinaigrette

A Warm Bacon Vinaigrette lightly dresses Baby Potatoes and spinach for a tasty--and fast--side dish.

  • Yield: Serves 4 (serving size: 3/4 cup)

Ingredients

  • 1 pound baby potatoes, quartered
  • 2 center-cut bacon slices
  • 2 tablespoons cider vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon Dijon
  • 1 teaspoon brown sugar
  • 1/4 teaspoon salt
  • 2 cups spinach
  • 1/4 cup green onions

Preparation

1. Place potatoes in a saucepan; cover with water. Bring to a boil. Cook 8 minutes; drain.

2. Cook bacon in a skillet until crisp; crumble. Combine drippings, vinegar, olive oil, Dijon, brown sugar, and salt in a bowl. Add potatoes and spinach. Top with green onions and bacon.
