Potato Stuffing

Yield:

4 cups (or enough to stuff one 3-pound duckling)

Ingredients

4 cups cooked hot mashed potatoes
2 cups soft breadcrumbs
1/2 cup butter or margarine, melted
1 tablespoon plus 1 teaspoon onion juice
1 teaspoon salt
1 teaspoon rubbed sage
1/2 teaspoon pepper

Preparation

Combine potatoes, breadcrumbs, butter, onion juice, salt, sage, and pepper, mixing well. Spoon mixture into a greased 1 1/2-quart baking dish. Bake covered at 350° for 25 minutes. Uncover, and bake 5 minutes or until thoroughly heated.
