Potato Mozzarella Baskets

Inspired from Indian expert, Nita Metha's Mushroom and Olive Baskets, this variation is a fun and delicious way to perk up any party or even just to serve up as an evening snack for kids. What's better than potatoes and cheese? Well, serving it in a bread basket. Make this crowd-pleaser and your next party will be a sure-shot hit!

Ingredients

  • 6 slice(s) Bread
  • 1 sprig(s) Coriander (to garnish)
  • 1 teaspoon(s) Cumin Powder
  • 1 cup(s) Mozzarella Cheese
  • 1 teaspoon(s) Olive Oil
  • 2 teaspoon(s) Paprika Powder
  • 2 piece(s) Potatoes
  • Salt, to taste

Preparation

  1. - Preheat oven to 400F
  2. - Spray a muffin pan OR six ramekins/oven-safe bowls with oil
  3. - Using a rolling pin flatten the bread slices
  4. - Using a round cookie cutter or a pizza cutter, cut circles out of the flattened bread slices
  5. - In a saucepan, heat oil and add the boiled, peeled and cubed potatoes
  6. - Toss in the paprika powder, cumin powder and salt and stir until well mixed
  7. - Place a bread 'circle' in each of your prepared ramekins/muffin cups give them a gentle push to 'sit' inside
  8. - Spoon prepared potato filling in each cup and place in oven for about 6-8 minutes or until the bread is slightly toasted/browned on its edges
  9. - Open oven and sprinkle cheese on top of each basket and pop back in oven until cheese melts and slightly browns (about another 6-8minutes)
  10. - Once done, garnish with cilantro and serve hot with tomato ketchup
