Portuguese Sardine and Potato Salad with Arugula

I wasn't sure what to expect, but this was really good! I also used canned sardines.

My husband I had this for dinner last week. It was so good! We couldn't find fresh sardines so we got some Spanish ones packed in oil. Not cheap but definitely worth it. We spent our honeymoon in Portugal and this captured the flavors and memories of our trip.

I made this to take to work for lunch this week. I used canned sardines as well. I love smoked paprika, and I thought this was delicious.
