Pork Tacos with Corn-Jicama Salsa and Guacamole

    Love, love, love this one! We altered the recipe a bit and grilled the pork, because in the summer we grill everything. I used the same seasonig and it was perfect! The Jicama salsa and the gucamole played well together as well. Will make this again for sure!

    We really liked this recipe...I was skeptical that the pork might dry out, but mixed with the guacamole and corn salsa, it was amazing. I didn't use jicama because I somehow managed to overlook that item on the list when shopping, so I added chopped tomatoes. Also, we used whole wheat tortillas, over corn. Really fresh and delicious.
