Pork Saltimbocca with Polenta

    This was fabulous! I couldn't find the quick cooking polenta, so I bought the pre-cooked kind in a tube. I added a little bit of milk with some in a saucepan and walah! Very, very good.

    Very tasty. I substituted grits for the polenta and low sodium bacon for the prosciutto (it's what I had on hand). I precooked the bacon and it seemed to work very well. I also cooked the pork for about 2 minutes on each side in the pan (just to brown it) and then transferred it into a 350 degree oven for about 10 minutes until it was done. I will definitely make it again! My husband loved it!

    Followed the recipe exactly, it was excellent and easy to prepare. I served it with steamed green beans and would make again, and for company.

    I've made this 3 or 4 times already. Perfect for having people over for dinner.
