Trip fat from chops if desired. Sprinkle both sides with salt and pepper. Coat large nonstick skillet with cooking spray; place over medium-high heat until hot. Add chops to skillet and cook 3-4 minutes each side until browned. Remove and keep warm.
Add broth to skillet, stirring to loosen browned bits. Combine mustard and half-and-half; add to skillet. Reduce heat and simmer 7 minutes or until sauce has thickened slightly. Spoon over chops.
