This recipe goes with Salmon with Bay, Orange, and Porcini
- 3 tablespoons fennel seeds
- 3 tablespoons kosher salt
- 3 tablespoons sugar
- 2 ounces dried porcini mushrooms
- 4 teaspoons pepper
- Working in batches in a spice grinder or clean coffee grinder, grind all ingredients until finely ground.
