3 tablespoons fennel seeds
3 tablespoons kosher salt
3 tablespoons sugar
2 ounces dried porcini mushrooms
4 teaspoons pepper
Working in batches in a spice grinder or clean coffee grinder, grind all ingredients until finely ground.
