Porcini Rub

The earthly flavors of the porcinis come through nicely on our Salmon when grilled with Porcini Rub generously sprinkled all over the fish.


  • 3 tablespoons fennel seeds
  • 3 tablespoons kosher salt
  • 3 tablespoons sugar
  • 2 ounces dried porcini mushrooms
  • 4 teaspoons pepper

How to Make It

  1. Working in batches in a spice grinder or clean coffee grinder, grind all ingredients until finely ground.
