Porcini Rub

The earthly flavors of the porcinis come through nicely on our Salmon when grilled with Porcini Rub generously sprinkled all over the fish.

Ingredients

3 tablespoons fennel seeds
3 tablespoons kosher salt
3 tablespoons sugar
2 ounces dried porcini mushrooms
4 teaspoons pepper

Preparation

Working in batches in a spice grinder or clean coffee grinder, grind all ingredients until finely ground.
