One of our favorite week night meals. This is so easily doubled, freeze one for when you need a super quick, homemade dinner. About 2lbs chicken makes about 3 cups chopped chicken. Boiling the chicken in chicken broth makes it even tastier. Add chopped broccoli for a more complete meal. YUM!

Great dish. I added chopped water chestnuts for texture. Served with wild rice and sauteed french-style green beans. My guys thought it was a holiday!

Embarrassingly simple and very tasty. For us, we had 4-5 servings. Served with long-grain/wild rice and steamed broccoli. It needs to be served with colorful foods on the plate since it is creamy white itself. Good comfort food.

My family loved this dish. I baked 2 lbs. of chicken tenders sprinkled with celery seed at 375 for 20 minutes for my 3 cups of chopped chicken. The dish was very good!

This is such an delicious, easy, doofus-proof recipe! I made mine with fat free ingredients using mushroom soup and added a teaspoon of Better Than Boullion mushroom base. Topped it with Rice Krispies instead of the butter and cracker topping. Quick, delish, full of flavor and healthy. I agree with dpkp03 will need to serve it with broccoli and some pickled beets for some Southern 'color on our plate'.

Thank goodness this is on here. I got this recipe about 13 years ago from a school Project Graduation cookbook and I couldn't remember if it was one or two cans of cream of chicken. This is one of my repeats. I make new recipes every week and have for years. When a recipe is worthy of being repeated it has to be amazing and all of us love this.
