Ingredients

  • Dressing:
  • 1/2 cup fresh orange juice
  • 1/4 cup lemon juice
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon paprika
  • 1 shallot, finely chopped
  • 1 clove garlic, crushed
  • 1 teaspoon Dijon mustard
  • 1/3 cup olive oil
  • Salad:
  • 6 cups baby arugula
  • 1 cup pomegranate seeds
  • 2 pears, quartered, cored, cut into 1/4-inch-thick slices

Preparation

  1. In a small bowl, whisk all dressing ingredients except oil. Whisk in oil. In a bowl, toss arugula, pomegranate seeds and pears with dressing; serve.
