Polenta with Port-Poached Quince and Blue Cheese

    I have served this appetizer twice now and have had great reviews both times. This latest time making it, I couldn't find quince so I used mango instead. It still came out great. (But you don't cook the mango; just make the reduction separately and use raw chopped mango).
