Polenta Lasagna

    Delicious. I chopped up a bunch of spinach and added it with the last set of veggies. My husband was very surprised halfway through the meal when I told him there was no actual meat in this, although next time I might try using ground turkey or buffalo for a little flavor. Even my very picky four-year-old son cleaned his plate! It was easy to make, and we will definitely add this to our rotation of regular meals.

    This was a watery, saucy mess. I added more veggies, but really it only needs a can of tomatoes or sauce not a full jar. Looks nothing like the picture. I would also suggest adding more garlic.

    Hate to sound lazy but Trader Joe's markets a delicious Chicken Sausage Lasagna that is inexpensive, quick to heat, nutritious and terrific.

    We loved this! Quick, easy, great. We actually got some veggie Italian Sausage, which added a nice flavor. The sauce was great and lends itself to variation depending on what veggies are in season. The polenta was easier than lasagna noodles and also helps the meal stick with you a lot longer. Polenta lasagna is now on our regular rotation.

    This was delicious! I used smoked chicken sausage because that was what I had in the fridge, and it went really well with the veggie mixture. I also used slightly less than a full jar of tomato sauce (again, what I had), and the consistency was perfect. My other half says this is one of his all-time favorites. Looking forward to those leftovers!

    This is delicious, loved by all! Tip: After cooking, put in refrigerator overnight. Next day cut it into square portions and heat those up in oven. Tasty, stayed in form, easy! If it's served right after cooking, it can be saucy, messy, unappealing.

    This was very tasty! I made instant polenta for the recipe instead of the log. I also used ground turkey and made my own marinara sauce. I added some spinach to sneak in a little extra veggies. I spiced both the sauce and the veggie/meat combo with garlic, salt, pepper, oregano, basil, and a little cayenne. I would definitely make this again!

    Very tastey and veggie filled. It took a little maneuvering to get the polenta rounds in the 8x8 pan to sit just right. Not only was it yummy, with a fair serving size, but it looked gorgeous coming out of the over. Will definitely make again.

    I HAVEN'T MADE THIS BUT IT SOUNDS SO GOOD. I DON'T THINK I CAN BUY POLENTA IN OUR STORES. DOES ANYONE HAVE A RECIPE FOR POLENTA OR IS IT JUST CORNMEAL MUSH CHILLED AND CUT? phyl32

    We enjoyed this, but it wasn't our favorite thing ever. I used chicken sausage instead of veggie sausage, and I used more veggies than called for, so I put it into a bigger pan, even though I used the same amount of polenta. I am content to eat the leftovers (mine made 8 portions in the bigger pan), but I probably won't make this again. I served it with roasted asparagus.

    This was the first time that I had ever eaten or cooked with polenta. Excellent dish. I made my own marinara sauce. I also sauted in med size eggplant, diced and a 6oz bag of spinach. This was wonderful. I'll make this anytime!

    I had very little hope for this dish...it just didn't sound appealing. But it was surprisingly great. Even the "fake" sausage was really good. The sauce was tasty. We were pleasantly surprised and will do it again!

    Just okay. I made it exactly as written (with GimmeLean and sundried tom. polenta). I used Ragu light sauce-- I think that if I were to make this again I'd use a higher taste jarred sauce (i.e. Classico).
