Poached Pears

Yield 4 servings

  • 4 ripe pears
  • 2 tablespoons lemon juice
  • 1 large lemon, thinly sliced
  • 2 cups water
  • 2 cups sugar
  • 2 (4-inch) sticks cinnamon
  • 16 whole allspice

How to Make It

  1. Peel pears, removing core from bottom end but leaving stem intact. Slice 1/4 inch from bottom of each pear to make a flat base. Brush pears with lemon juice to prevent browning; set pears aside.

  2. Combine remaining ingredients in a large saucepan; bring to a boil. Add pears and cook, uncovered, over medium heat 20 minutes or until tender.

  3. Remove pears to a warm serving dish using a slotted spoon. Continue cooking liquid over medium heat 15 minutes or until slightly thickened. Remove whole spices from syrup mixture, and discard. Pour syrup mixture over pears.
