Poached Mullet

1/2 small onion, sliced
2 tablespoons lemon juice
10 whole cloves
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon red pepper
1 1/2 pounds mullet fillets
Lemon wedges


Add water to a large skillet to a depth of 1 inch. Add first 6 ingredients; mix well, and bring to a boil. Reduce heat; cover and simmer 10 minutes. Add fish; cover and simmer 8 minutes or until fish flakes easily when tested with a fork.

Transfer to a warm serving platter; discard cooking liquid. Garnish fish with lemon wedges. Serve immediately.
