Ingredients
- 1 pound plums, pits removed and cut into eighths (about 5 plums)
- 1 quart strawberries, quartered (about 3 cups)
- 1 cup blueberries
- 1/4 cup packed brown sugar
- 2 tablespoons lemon juice
- 1 teaspoon vanilla extract
- Cooking spray
- 1 cup regular oats
- 3/4 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 6 tablespoons chilled butter, cut into small pieces
- 1/2 cup turbinado sugar
Preparation
- Preheat oven to 375°.
- Combine plums and next 5 ingredients in an 11 x 7-inch baking dish coated with cooking spray.
- Combine oats and next 3 ingredients in a medium bowl. Cut in butter with a pastry blender or 2 knives until mixture resembles coarse meal. Add turbinado sugar, stirring well.
- Sprinkle oat mixture over fruit mixture. Bake at 375° for 45 minutes or until topping is lightly browned and fruit mixture is bubbly. Let stand 15 minutes before serving.
