Pistachio Vinaigrette
This recipe goes with Grilled Vegetable Salad
Yield: Makes 1/2 cup
Ingredients
- 2 tablespoons fresh lemon juice
- 2 teaspoons honey
- 1/2 teaspoon ground coriander
- 1/2 teaspoon salt
- 1/4 teaspoon ground cumin
- 1/4 teaspoon olive oil
- 1/4 cup shelled pistachios, toasted and chopped
- 2 tablespoons chopped fresh cilantro
Preparation
- Whisk together first 5 ingredients in a bowl; slowly whisk in olive oil. Stir in pistachios and chopped fresh cilantro just before serving.
