Pistachio-Lime Vinaigrette

  • Yield: about 2 cups

Ingredients

  • 1/3 cup fresh lime juice
  • 1/3 cup honey
  • 1/4 cup chopped purple onion
  • 1 teaspoon dried crushed red pepper
  • 1/2 teaspoon salt
  • 1/4 cup chopped fresh cilantro
  • 3/4 cup vegetable oil
  • 1 cup pistachios

Preparation

Process first 6 ingredients in a blender until smooth. With blender running, add oil in a slow, steady stream. Turn blender off; add pistachios, and pulse until pistachios are finely chopped. Store dressing in refrigerator.
