Pistachio-Lime Vinaigrette
Ingredients
- 1/3 cup fresh lime juice
- 1/3 cup honey
- 1/4 cup chopped purple onion
- 1 teaspoon dried crushed red pepper
- 1/2 teaspoon salt
- 1/4 cup chopped fresh cilantro
- 3/4 cup vegetable oil
- 1 cup pistachios
Preparation
- Process first 6 ingredients in blender until smooth. With blender running, add oil in a slow, steady stream. Turn blender off; add pistachios, and pulse until pistachios are finely chopped. Store in refrigerator.
