Pineapple-Rum Slush

Freeze this fruity drink for at least four hours before serving at your next pool-side party. Golden or dark rum adds a rich flavor to the sweet cocktail. If you'd prefer a non-alcoholic version, substitute orange juice for the rum.

Cooking Light MAY 1999

  • Yield: 6 servings (serving size: 1 cup)

  • 3 cups pineapple juice
  • 1 cup fresh lemon juice (about 5 large lemons)
  • 3/4 cup golden or dark rum
  • 3/4 cup water
  • 1/2 cup sugar

Combine all ingredients in a large plastic pitcher; cover and freeze at least 4 hours or until slushy.

Note: Substitute orange juice for rum, if desired.
