Mix the ingredients the night before, and freeze. Scrape the mixture just before serving so it will be light and fluffy.
1 cup water
3/4 cup pineapple juice
1/3 cup sugar
2 tablespoons dark rum
How to Make It
Combine the first 3 ingredients in a medium saucepan; bring to a boil. Cook 1 minute or until sugar dissolves, stirring frequently. Remove from heat; stir in rum. Cool completely. Pour into an 8-inch square baking dish. Cover and freeze 8 hours or until firm.
Remove mixture from freezer; scrape entire mixture with a fork until fluffy.
