- In sm. pot, combine:
- 1/2 c. sugar and 1/2 c. water and bring to boil. Reduce heat and simmer until sugar dissolves (1-2 min.); let cool.
- In lg. bowl, combine sugar syrup, 3 qt. pineapple juice, 1 lt. gin, and 1 c. fresh lime juice. Refrigerate for up to 6 hours. Just before serving, add 1 lt. club soda and 1 c. fresh mint leaves. Serve over ice.
