Pineapple-Lemongrass Syrup
For a tropical flair, flavor you julep with Pineapple-Lemongrass Syrup.
Yield: Makes 2 2/3 cups
Ingredients
- 1 cup granulated sugar
- 1/2 cup light brown sugar
- 1 1/2 cups water
- 1 cup pineapple juice
- 2 tablespoons fresh lime juice
- 15 fresh mint sprigs
- 3 (3-inch) pieces fresh lemongrass
Preparation
- Boil granulated sugar, brown sugar, and water, stirring often, 2 to 3 minutes or until sugar dissolves. Remove from heat; add pineapple juice and remaining ingredients, and cool completely. Cover and chill 24 hours. Strain syrup; discard solids.
