Pineapple-Cucumber Salsa

Ingredients

  • 1 (20-ounce) can pineapple tidbits in juice, drained
  • 1 1/2 cups peeled, finely chopped cucumber
  • 1/3 cup finely chopped purple onion
  • 2 tablespoons sugar
  • 3 tablespoons fresh lime juice (about 1 large lime)
  • 1/8 teaspoon dried crushed red pepper

Preparation

Combine all ingredients in a large bowl; serve immediately or cover and chill, if desired. Serve with grilled fish, chicken, or pork.
