Ingredients

  • 3/4 cup (3 ounces) shredded fat-free sharp Cheddar cheese
  • 1/2 cup finely chopped green pepper
  • 2 teaspoons grated onion
  • 1 (8-ounce) can crushed pineapple in juice, well drained
  • 1/2 (8-ounce) package Neufcha@Gtel cheese, softened
  • 1/2 (8-ounce) package fat-free cream cheese, softened
  • 2/3 cup chopped fresh parsley

Preparation

  1. Combine first 6 ingredients in a medium bowl. Cover and chill 30 minutes.
  2. Shape cheese mixture into a ball; roll in chopped parsley, coating thoroughly. Cover and chill thoroughly. Serve with Melba toast rounds or fat-free crackers.
