This creamy cheese dip can do a second shift as a sandwich spread--a sandwich with whole wheat bread, that is.

Ingredients
- 3/4 cup 1% low-fat cottage cheese
- 3 tablespoons light mayonnaise
- 1/2 teaspoon white wine vinegar
- 1/8 teaspoon pepper
- Dash of hot sauce
- 1/4 cup (1 ounce) shredded reduced-fat sharp Cheddar cheese
- 1 (2-ounce) jar diced pimiento, drained
Preparation
- 1. Combine first 5 ingredients in a blender or food processor; process until smooth. Cover and chill.
- 2. Stir in Cheddar cheese and pimiento. Serve with fresh vegetables (vegetables not included in analysis).
