How to Make It

Combine vinegar, water, sugar, salt, mustard seeds, thyme sprigs, and chile in a saucepan, and bring to a boil over high. Add shallots, stirring to separate shallot rings, and cook 1 minute. Remove from heat, and let cool 15 minutes before serving.
