Picante Meat Loaf

Instead of spooning ketchup over a meat loaf, try using picante sauce. The picante sauce is lower in carbs than ketchup and adds a kick to the meat.

Ingredients

  • 1 pound ground round
  • 2/3 cup whole wheat breadcrumbs
  • 1/2 cup chopped onion
  • 1/4 cup coarsely chopped carrot
  • 2 large egg whites, lightly beaten
  • 1/4 teaspoon salt
  • 1/4 teaspoon dried rubbed sage
  • 1/4 teaspoon pepper
  • Cooking spray
  • 1/2 cup picante sauce

Preparation

  1. 1. Preheat oven to 400°.
  2. 2. Combine first 8 ingredients in a medium bowl. Shape mixture into a 6 x 4-inch loaf, and place on a rack in a broiler pan coated with cooking spray.
  3. 3. Bake at 400° for 35 minutes. Brush picante sauce over meat loaf. Return to oven, and bake an additional 5 minutes. Let stand 5 minutes before slicing.
