Pesto has a very concentrated flavor, so a small amount goes a long way. You can find bottled pesto on the shelves with other sauces and condiments or in the refrigerated section with the fresh pasta sauces.
4 cups cauliflower florets
1/2 cup water
2 1/2 tablespoons commercial pesto
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
How to Make It
Place cauliflower in a microwave-safe bowl; pour water over cauliflower. Cover with plastic wrap; vent. Microwave at HIGH 6 minutes or until done.
Drain cauliflower, and return to dish. Add pesto, salt, and pepper; toss well. Cover; microwave at HIGH 1 minute or until hot.
