This delectable pasta dish features swirls of tender angel hair, plump shrimp, and grape tomatoes tossed with pesto. Garnish with sprigs of basil just before serving for extra color and a burst of freshness.

4 ounces uncooked angel hair pasta
6 cups water
1 1/4 pounds peeled and deveined large shrimp
1/4 cup commercial pesto, divided
1 cup halved grape tomatoes
1/4 cup (1 ounce) shaved fresh Parmesan cheese
Basil sprigs (optional)
How to Make It
Cook pasta according to package directions, omitting salt and fat; drain.
While pasta cooks, bring 6 cups water to a boil in a large saucepan. Add shrimp; cook 2 to 3 minutes or until done. Drain shrimp; toss with 2 tablespoons pesto and tomatoes. Stir in pasta and 2 tablespoons pesto. Top with cheese. Garnish with basil, if desired.
Great recipe. I think the recipe really depends on the pesto you purchase since that is the main flavor. It is fast to prepare and my 3 y/o and 5 y/o ate all of it. I did chop up some fresh basil and put it on top with the cheese. We just served this with some french bread. We will make this again for sure.
This is super simple to make, but yields delicious results. My 4 year old gives it the thumbs up as well (her favorite food is shrimp, though.) The fresh tomatoes give it a great fresh flavor. I think I would buy fresh basil to go with this, as is suggested. I would even make this for a dinner party It took me about 20 minutes to make this. I didn't alter the recipe at all except to add some salt to the water that I boiled the shrimp in. I would make this for a weeknight meal or a special occasion. I served it with French bread and a green salad.
