Pesto Fettuccine with Chicken

    I made this for the first time last night and it was delightful. The only thing I changed about the recipe was I didn't have any tomatoes so I substituted an orange bell peper cut up into chunks instead and the flavors worked well together. I also used homemade pesto which really made the recipe shine! Will definitely make this one again.

    I just made this for the second time - it is quick, easy, and my husband went back for seconds! I cooked the chicken in olive oil, which was nice because I got to skip the step where you measure out a tbs of fat to set aside. There wasn't a lot of liquid left in the pan when I added the tomatoes, so I added a little more olive oil; it still tasted great!

    Super easy and tasty. I cooked the chicken in olive oil and didn't need to drain any of the oil. Cooked tomatoes and sliced zucchini in the chicken pan for extra flavor. My daughter loved it which is always an accomplishment! My husband is avoiding carbs so I kept a few chicken breasts whole and spooned the veggies over them. Yum!

    It was amazing! I was in the mood for Italian so I searched this website for some ideas. Needless to say I found so many I couldn't decide! The best part was that all of these ingredients were in my kitchen. There was no need to go to the store! I only changed the pasta to Penne & Rotinin because I didn't have any fettucini. I love love loved it!!!!!

    Pros: Easy to make, fast, can be adjusted to feed more or less people. Cons: Bland. This was the first time I made this recipe, so I made it as directed, and it needs some flavor help. Overall, a quick, healthy meal that fills you up in a pinch.

    I added asparagus and yellow pepper as well. It added the PERFECT touch!!! Delicious!

    I also cooked the chicken in olive oil. I cut the raw chicken into chunks and dredged them in flour, salt and pepper and cooked it. I added a little extra pesto sauce (Buitoni) and it was fantastic. My husband who isn't a pasta or tomato person thought it was delicious. I will be making this again very soon!

    I love this recipe and make it all of the time, of course, like everyone else, I have my own changes. I do not use the extra water in my recipe and I also cut my chicken in cubes and then cook it. Great recipe!!

    I added some toasted pine nuts, switched olive oil for the butter, and added some garlic in the oil as I cooked the chicken. I can't wait to make this again, with some more veggies in the dish. Super easy!

    I added capers, artichoke hearts, breaded chicken, and I drizzled on a balsamic reduction glaze, just to counter act the bitterness or the whole thing. Turned out great! So easy to make and good left overs if you have any.

    Love this quick and tasty recipe! I use the prepared pesto from Costco. I add more tomatoes and some asparagus tips. Top with shaved Parmesan, delicious!
