Pesto
Ingredients
- 1/2 cup pine nuts, toasted
- 2 garlic cloves, minced
- 4 cups loosely packed fresh basil leaves
- 1/3 cup extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- 1/2 cup freshly grated Parmesan cheese
- 1/4 teaspoon salt
Preparation
- Process pine nuts and garlic in a food processor until blended. Add basil; process until finely chopped. With processor running, gradually add oil in a slow, steady stream. Add lemon juice, cheese, and salt; process until mixture has a thick consistency.
