"This is an excellent side dish, but I also love to smear it on bread with a drizzle of fruity olive oil."
2 tablespoons olive oil, divided
2 garlic cloves, minced
1 tablespoon chopped fresh thyme
1 tablespoon fresh lemon juice (about 1 small lemon)
2 (19-oz.) cans cannellini beans, drained and rinsed
1 teaspoon table salt
1 teaspoon freshly ground black pepper
How to Make It
Heat 1 Tbsp. oil in a large skillet over medium heat. Add garlic, and sauté 1 minute.
Add thyme, lemon juice, beans, and 1 cup water. Cook, stirring often, over medium heat 4 minutes or until thickened. Stir in salt and pepper, and place bean mixture into a large bowl. Mash with a potato masher, leaving some beans whole. Drizzle mash with remaining 1 Tbsp. oil.
