Peppered Peanut Brittle

    I like the spiciness, but the brittle was chewy like hardened taffy. Brittle should be crunchy. I found another recipe and added the spices from this recipe.

    Seemed good....except that I had difficulty in spreading out the mixture so it came out really thick. Might try again!

    I thought the texture and thickness of this came out perfectly, unlike other readers - you do need to work quickly, as you only have a limited window to spread it all the way to the edges of the jelly roll pan! It was actually a touch *too* peppery for my taste, and I might decrease the amount of each spice, but still made a wonderfully different snack.

    I haven't tried this recipe yet but it sounds yummy. Has anyone considered making this recipe using cashews coated with cracked black pepper and sea salt? These are readily available at the supermarket and have a wonderful flavor. Naturally one would NOT add salt to the recipe, but you might also skip adding additional pepper...or maybe not.
