Penne With Vodka Sauce

Ingredients

  • 2 tablespoon(s) olive oil
  • 1 cup(s) shallots finely chopped
  • 1/4 teaspoon(s) crushed red pepper flakes
  • 1/2 cup(s) vodka
  • 3/4 cup(s) heavy cream
  • 3/4 cup(s) tomato sauce canned
  • 8 ounce(s) pasta
  • 4 ounce(s) thinly sliced prosciutto chopped
  • 2/3 cup(s) Asiago cheese grated
  • 2 tablespoon(s) parsley chopped
  • 2 tablespoon(s) basil chopped

Preparation

  1. • Saute shallots & crushed red pepper in heavy large skillet (w/olive oil) until shallots translucent;
  2. • Add vodka and ignite with long match – simmer until flames subside;
  3. • Increase heat to high & add cream and boil until thickens – about 2 min;
  4. (can be made a day ahead);
  5. • Cook pasta – reserve ¼ cup water;
  6. • Add cooked pasta to warm sauce and stir in prosciutto, 1/3 cup cheese, parsley & basil;
  7. • Add reserved liquid from pasta if dry;
  8. • Season with S&P, sprinkle with remaining cheese
