Remove casings from sausage. Cook sausage in a large nonstick skillet coated with cooking spray over medium-high heat until browned, stirring to crumble. Add onion and garlic; sauté 2 minutes. Add mushrooms, bell peppers, and zucchini; sauté 5 minutes or until vegetables are tender and sausage is done. Stir in tomatoes; cover and cook over medium-low heat 10 minutes. Remove from heat; stir in sour cream. Add pasta and black pepper; stir well. Cook over medium-low heat 3 minutes or until thoroughly heated.
Been making this for years but lost the recipe and was super upset. So blessed to find on the website. I always leach the zucchini beforehand for 20 minutes so they are not soggy but otherwise this is a true winner!
Love this recipe, I make it all the time. Get’s the veggies in a meal deliciously. I add capers and some times add sun dried tomatoes. And love it with the spicy turkey sausage. Looks fancy but super easy.
love this recipe. We make it all the time- I find it pretty easy to make as you dont have to do a lot of measuring with spices, etc. We use italian sweet sausage and it takes just as good! I have made this for friends, and they always ask for the recipe. Definitely recommend trying!
This is one of the best Cooking Light recipes I've tried yet. So full of flavor and easy to make. I used a regular onion instead of red onion, left out the mushrooms (not a fan), and increased the amount of peppers and zucchini. I followed other reviewers' suggestions and put the zucchini in last, about 5 minutes before the end. I would definitely make this for company, maybe with a spinach salad. This recipe is a keeper.
My husband and I really enjoyed this recipe, and it made the house smell so good. :) He really liked the sauce and said that he wanted to add it to more foods! It is a nice weeknight or weekend dinner. I served ours with salad and homemade garlic bread (and of course, some wine). I also used whole wheat spaghetti. Next time, I'll try the penne instead.
This is so good. I was unsure because of the few simple ingredients but definitely a winner. I doubled the recipe but only used 12 oz of some whole wheat roasted garlic fettucine. Some of the previous reviews said it wasn't very saucy so after doubling the recipe I also added one 10 oz can rotel diced tomatoes with green chilies. Added some basil and italian seasoning and done. Delicious, simple, quick and easy. Thumbs up from everyone.
