- 2 eggs, beaten
- 1 cup plus 2 1/2 tablespoons firmly packed brown sugar
- 1/2 cup all-purpose flour
- 1/4 teaspoon baking powder
- Dash of salt
- 1/2 teaspoon vanilla extract
- 2 cups chopped pecans
How to Make It
Combine eggs and sugar in a large mixing bowl, stirring well.
Combine flour, baking powder, and salt in a small mixing bowl; add to egg mixture. Mix well. Stir in vanilla and pecans.
Drop dough by heaping teaspoonfuls 3 inches apart onto aluminum foil-lined cookie sheets. Bake at 350° for 8 minutes. Let cool completely on cookie sheets; peel off aluminum foil. Store cookies in airtight containers.
