Jazzed-Up Peas and Pearl Onions

Yield: Makes 8 servings
Ingredients
- 1 tablespoon butter
- 1 tablespoon extra virgin olive oil
- 1 (14.4-oz.) package frozen pearl onions, thawed
- 1 teaspoon sugar
- 2 (14.4-oz.) packages frozen peas, thawed
- 2 tablespoons fresh lemon juice
- 1/4 cup coarsely chopped fresh flat-leaf parsley
- 2 tablespoons butter
- 1 1/2 tablespoons coarsely chopped fresh dill
- Kosher salt to taste
- Freshly ground pepper to taste
Preparation
- Melt 1 Tbsp. butter with olive oil in a large skillet over medium-high heat. Add pearl onions and sugar; sauté 5 to 7 minutes or until onions are caramel colored. Add peas and lemon juice; cook, stirring constantly, 2 to 3 minutes or until thoroughly heated. Remove from heat; stir in parsley, 2 Tbsp. butter, and fresh dill. Add kosher salt and freshly ground pepper to taste.
