Ingredients
- 2 cups chopped red Anjou pear
- 1/3 cup sliced kumquat
- 2 tablespoons fresh lemon juice
- 1 tablespoon honey
- 1/3 cup sliced green olives
- 3 tablespoons thinly sliced shallots
- 1 1/2 tablespoons extra-virgin olive oil
- 1 1/2 tablespoons chopped fresh chives
- 1 1/2 teaspoons chopped fresh flat-leaf parsley
- 1/4 teaspoon salt
- 1/8 teaspoon ground red pepper
Preparation
- Combine pear, kumquat, lemon juice, and honey; let stand 10 minutes. Add olives, shallots, and remaining ingredients; toss.
