- 8 Bartlett pears, peeled and cut into 1/4-inch-thick slices
- 3 cups sugar
- 2 lemons, thinly sliced
- Cook pears, sugar, and lemons in a heavy 3-qt. saucepan over medium heat, stirring often, 5 to 7 minutes or until sugar dissolves. Increase heat to medium-high; cook, stirring occasionally, 30 minutes or until mixture is thick and golden and pears are tender. Cool 10 minutes. Spoon into 3 (1-pt.) widemouthed jars. Store in refrigerator up to 3 weeks.
